  • 1 tbsp honey or maple syrup (optional, for added sweetness)
  • A pinch of salt
  • Cooking spray or butter for greasing the pan

Instructions

  1. Prepare the Batter: In a mixing bowl, use a hand blender or fork to blend the cottage cheese until smooth. This step ensures there are no lumps in your pancakes.
  2. Add the eggs, almond flour, baking powder, vanilla extract, honey (if using), and a pinch of salt. Mix everything together until well combined. The batter will be slightly thicker than regular pancake batter.
  3. Heat a nonstick skillet over medium heat and lightly grease it with cooking spray or butter.
  4. Using a 1/4 cup measuring cup, scoop the batter onto the skillet. Cook each pancake for about 2-3 minutes on one side, until bubbles form on the surface and the edges look set.
  5. Flip carefully and cook for another 1-2 minutes on the other side, until golden brown. Repeat with remaining batter.

Notes

  • For a vegan version, replace the eggs with flax eggs (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water per egg). Use plant-based milk instead of honey for sweetness.
  • If you prefer thinner pancakes, add a tablespoon or two of milk to adjust the consistency.
