Ingredients

  • 6 large egg whites
  • 1/4 cup chopped fresh spinach
  • 1/4 cup diced bell peppers (any color)
  • 2 tablespoons shredded cheese (optional; try cheddar, mozzarella, or feta)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • Nonstick cooking spray or olive oil spray

Optional Add-ins:

  • Chopped tomatoes
  • Sliced avocado
  • Herbs like parsley or chives

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C). Line a muffin tin with silicone cups or lightly coat it with nonstick cooking spray.

  2. Prepare the Mixture: In a medium bowl, whisk the egg whites until slightly frothy. Stir in the chopped spinach, bell peppers, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix well to combine all ingredients evenly.

  3. Fill the Muffin Tin: Divide the mixture evenly among the muffin cups, filling each about 3/4 full. Use a spoon or small ladle for precision.

  4. Bake Until Golden: Place the muffin tin in the preheated oven and bake for 15–18 minutes, or until the tops are set and lightly golden brown. A toothpick inserted into the center should come out clean.

  5. Cool and Serve: Let the egg white bites cool in the tin for a few minutes before transferring them to a plate. Enjoy warm or at room temperature. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for longer storage.

Notes

  • Make Ahead Tip: Prepare a batch of egg white bites over the weekend and refrigerate or freeze them for busy mornings. Simply reheat in the microwave for 30 seconds.
  • Customization Ideas: Experiment with different fillings like diced ham, cooked bacon bits, sautéed mushrooms, or even salsa for a zesty twist.
  • Dietary Adaptations: For vegan versions, substitute dairy-based cheese with nutritional yeast or plant-based alternatives.
