Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts or thighs , cut into bite-sized pieces
  • Juice of 3 large limes (about ¼ cup)
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder (optional, for heat)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and black pepper , to taste
  • 2 cloves garlic , minced (optional, for extra flavor)
  • Fresh cilantro , chopped (for garnish)
  • Lime wedges , for serving
  • Optional accompaniments: Corn tortillas, guacamole, pico de gallo, shredded cheese

Instructions

Step 1: Prepare the Marinade

In a medium mixing bowl, whisk together lime juice, olive oil, cumin, smoked paprika, chili powder, garlic powder, oregano, salt, and pepper until well combined. If using fresh garlic, add it now and mix thoroughly.

Step 2: Marinate the Chicken

Add the chicken pieces to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or up to overnight for deeper flavor penetration.

Step 3: Cook the Chicken

Preheat your grill, skillet, or oven to medium-high heat. Remove the chicken from the marinade, letting any excess drip off. Grill or cook the chicken on a preheated skillet for about 6–8 minutes per side, or bake in the oven at 400°F (200°C) for 20–25 minutes, turning halfway through. Ensure the internal temperature reaches 165°F (74°C).

Step 4: Rest and Serve

Let the chicken rest for a few minutes before slicing or serving. Garnish with fresh cilantro and serve alongside lime wedges, corn tortillas, guacamole, or your favorite sides.

Notes

  • Substitutions : For a vegetarian option, replace chicken with firm tofu or portobello mushrooms marinated in the same sauce.
  • Customizations : Add more heat with sliced jalapeños or use honey for a touch of sweetness in the marinade.
  • Serving Suggestions : Pair with Mexican street corn, black beans, or roasted vegetables for a complete meal. Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage.
